Day 60 - Food and Fitness Fun

As part of our initiative to increase health and fitness among our students, especially in the older grades, Peg organized a Food and Fitness Club 4 years ago. They meet after school once a week for a 6 week period. Each week they have a theme like quick breads, soups, salads, pasta, etc. The students are placed into 3 groups and each group works on a different recipe. Once the slicing, dicing, mixing and cooking is done the students help do the dishes and then they go and play in the gym. At the end they return to the kitchen and each student is given a portion of the three recipes. They taste all three and give their opinions. Students then take their three full containers home to share with their families. It's a great project and it's free!
This year, they added a special event at the end of their 6 week session. Students prepared a meal and invited a guest for supper. One of my students was kind enough to invite me. Not only did the students prepare the meal but they served us. We started the meal with a delicious Spinach Salad with strawberries, grated carrot and a citrus dressing. It was served in baked tortilla shells which the kids thought were really fancy. Then we moved on to some yummy chili. We finished off with chocolate cups filled with vanilla ice cream and drizzled with raspberry coulis. The food was great and the company even better.
